Why did the Japanese cut terraces into the sides of mountains?

Japan cut terraces to have more farm land. Japan not being a big country, and relying on mainly agriculture, needed as much land as it could to farm. Some communities in Japan today still use the terraces in the sides of mountains to farm. Hope this helps.
